So I check out one of the places down in my hood this weekend. http://www.yelp.com/biz/pho-my-chau-restaurant-seattle

My review... great. I even went with the veggie and it was frickin delicious. Everything else on their menu looked really good as well.

that link is messed up.  I'm really glad that this weather is here so I can have pho ALL THE TIME!!!  I can't eat it during the summer.  but the rest of the year, it's perfect.  I want some now!!

I really need to get adventerous and start trying pho places in the neighborhood.  I have a problem and love Than brothers so much, that I'd rather just drive the little bit farther to eat there.

I always thought Than bros was too bland.

There's Viet Anh in Queen Anne (next to the bamboo gardens vegetarian chinese), it's pricey but delicious.

My main staple joint for pho is Moonlight Cafe up on 19th and Jackson. It's vegan and has fake meat and all that. It's crack sauce.

What do you guys dose yours with? I go with pepper sauce out of the little jar, fish sauce and as much stuff off the little plate as possible.

What's Vietnamese ham? Yeah, I loved the quail eggs in it, mine were still all liquidy in the middle and just gushed into my mouth. See, I told you that place was pretty good.

I'm hitting Monkey Bridge today for lunch.

Orge - I hit mine with a generous squirt of the hoisin sauce, 1 1/2 to 2 spoons of the chillis in the little jar (I prefer the ones in oil to the paste but prefer both of those over the rooster sauce), lime and basil. Maybe a dsh of the fish sauce if they have it. No sprouts, I prefer to munch those all on their own.

I always load mine up with the sprouts, as much Thai Basil as I feel like ripping up, all the lime juice I can squeeze out and then let the rind hang out in the pho, plus a generous squirt of Sriratcha and Hoison to the point where the broth is light red and 1 spoon of the chilli oil. No fish sauce though, I loathe that stuff.
I made Pho at home last week. It was not the greatest veggie broth I've ever made but I had all the right ingredients and still enjoyed the hell out of it.

Ok, I just had this soup* and, oh my god yas, it was delicious. The quail eggs do indeed explode into awesomeness whne bitten into. Though next time I go here I think I'm getting the prok stew with bolied eggs.



*Point of technicality. This soup is not really pho. Pho is made with a specific kind of beef broth, this has chicken broth. But it's a minor point as it relates to this discusion.

I was wondering what the official call on this was.  It was an amazing fucking soup though.  fucking amazing..
